Dehydrating: Kale
Fresh Kale when dehydrated for a few hours, turns into a healthy snack, even when you aren't camping (they might not even make it to the food bag when packing).
Grab a bunch, chop off the ends of the stems and make sure the leaves are well washed. Pad dry with a cloth or paper towel and put them into a bowl. Add a little bit of olive oil and sea salt and don't let them clump up when placing them on the trays. Dehydrate at 110º for about ten to twelve hours.
They will shrink a bit and become a little brittle, but they are a great substitute for potato chips!
